I have recorded the process as a screencast. The aim was to create a model  for capturing evidence of learning  over 60 year 3 pupils creating eBooks on 8 iPads. We ran 4 sessions each with around 16/17 pupils working in pairs.

Bookcreator app was for the content and the Documents app for the harvesting of outcomes.
